When Beau travels, the first night he’s gone I have to make comfort food. I almost always go to our local meat market and get a filet mignon make drool worthy, buttery steak.
Steak is my happy place.
If I don’t want to do steak then I almost always default to pasta. All. The. Pasta. I crave pasta every other hour. It’s a problem. That was the hardest for me to let go of when we started eating more paleo meals. Don’t get me wrong, I allow noodles to slip into our meal plan every now and then 😉
But when I got the spiral vegetable slicer I was thinking of all the ways I can use it and it hit me! Sweet potato noodles! Turns out everyone in the world is already doing it. But still…
I make a very quick Bolognese sauce – this is a mash up of my mom’s Bolognese and Ina Garten’s weeknight Bolognese. It is seriously so easy to make. It’s all my favorite ingredients that I always have on hand:

Sweet Potato Noodles Recipe with Weeknight Sauce
I want to be honest with you. The night I made this meal I was so very hungry. So after I snapped a few pictures of the sauce (before the sweet potato noodles were done) I was standing over this sauce pot with a big spoon eating it. This. Sauce!
No shame. But you’ll probably do the same and I find great comfort in this.
How to Make Sweet Potato Noodles
I have mentioned the spiral vegetable slicer on repeat the past few weeks. This thing! I love it. I have another recipe coming in which I use it for cucumbers.
This is the one I have:
It is so easy to use and I feel like they thought of everything. There is even little suction cup release knobs on the feet which help release it after the spiral slicing is complete.
It is so easy to clean. And, I have so much fun using it!

Once the sweet potatoes are spiraled(?) Or noodled(?) we put them into a pot of boiling water with a little salt and boil them for about 6 minutes. Drain and rinse with water (to stop the cooking). Any longer and they will get mushy. Taste them at 4 minutes and if you don’t like the consistency keep cooking them but no longer than 6 minutes.

Of course we add cheese. But you don’t have to.
