Ingredients

1 large egg yolk
1/4 teaspoon salt
2 teaspoons lemon juice
1 teaspoon white wine vinegar
1/4 teaspoon Dijon mustard (optional)
3/4 cup light olive oil
1/3 cup mayonnaise
Zest of one small lime
1 TBS lime juice
1 garlic clove, minced
1/8 teaspoon kosher salt

Instructions

In a small bowl add the egg yolk, salt, lemon juice, vinegar and Dijon mustard.
Whisk together for about 30 seconds.
As you are whisking, very slowly drizzle in the olive oil until the liquid becomes thicker.
Mix all ingredients together and serve with sweet potato fries.

Notes

Keeps in refrigerator for one week.
