Last week I was in Colorado Springs for an interview with the Focus on the Family broadcast. You can see the Facebook Live we did after the interview here. On my last day in the city, my mom and I went out to brunch at Shuga’s and she ordered a coconut lime spritzer.

I immediately ordered one to-go.

This drink is summer in a cup! Fresh coconut, tart lime, bubbly sparkling water. Are you with me?!

This summer paleo spritzer is perfect for anyone who wants a delicious and refreshing drink without all the added calories from sugar or alcohol!

It’s so easy to bring together and everyone can make it to their liking. I like extra lime, some people like it extra creamy, others like it with just a hint of coconut. It’s perfect if you are hosting a party and need a non-alcoholic go-to beverage.

I use my soda stream for the sparkling water (we had to get this because my love for sparkling water was a little out of control). You can just use cans or bottles of sparkling water. Be sure not to use sparkling mineral water – it changes the taste.

Another thing I love about this drink is I always have the ingredients on hand. Perfect for people who stop over last minute!

Paleo Summer Spritzer

This paleo spritzer is perfect for anyone who wants a delicious and refreshing drink without all the added calories from sugar or alcohol!

Ingredients

2 13.5 oz cans coconut milk

23 limes

8 oz sparkling water

Instructions

Open can of coconut milk and place in a mason jar. Shake vigorously to combine the cream and the milk.

In a cup filled with ice, pour in 6 ounces of the coconut milk. Add juice from half a lime (if you like less of a lime flavor, you can add less).

Top off with sparkling water! Stir, add a lime slice as a garnish, and serve.

Notes

If you are looking to make this into an adult beverage, add 1 1/2 ounces rum or vodka to each cup.
