A few weeks ago I picked up a burrito bowl from Chipotle for lunch. I returned home and realized I forgot to ask for the salad dressing. I love getting the salad dressing and pouring it all over my burrito bowl. Is this dressing technically for people who order salads? Yes. But, this is who I am.

I was quite distraught when I made this realization. My burrito bowl did not have the tangy zip that the salad dressing brought.

It then occurred to me that I should just make my own chipotle copycat salad dressing so I can always have it on hand.

We are a resourceful bunch around here!

I thought while I was sharing this recipe with you I’d share a few other dressings we have on heavy rotation around here. Listen, no one loves sauces and condiments more than me. The more, the better.

Homemade Chipotle Honey Dressing

Here’s the thing to note, this dressing uses chilies in Adobo sauce. And this beautiful jar of chilies and sauce packs some heat.

I recommend you dip the tip of a spoon in the sauce and give it a little taste so you can tell what kind of heat profile you are working with.

I use only one small size chili and 2 tsp sauce in my dressing. I like just a hint of heat with a lot of flavor. You might want to start here and then if you want more spice, you can always add more sauce or more chilies! (It’s easier to add heat, than subtract heat so keep that in mind!)

This is your sauce, make it as you like.

If you find that you accidentally made it too spicy, just add more honey (and some warm water to thin it out).

I place the the rest of the chilies and adobo sauce in an airtight container in my refrigerator. It stays good for a little over two weeks and you can continue to make this dressing anytime you need some.

I make my Greek vinaigrette weekly. I love it on just about anything but especially for nights where we a have mediterranean spread! (It’s perfect to marinate your chicken in as well.)

And this honey mustard dressing. I could drizzle this on EVERYTHING! It is necessary to put this on your chicken strips salad (or really any salad). Also perfect for marinating your chicken in and grilling.

Homemade Chipotle Honey Dressing

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 3 TBS honey
  • 1 small chili in adobo
  • 2 tsp adobo sauce (start here and add more adobo sauce if you want more heat)
  • 2 garlic cloves
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • Juice from 1 lime
  • 2 TBS cold water

Instructions

Add all ingredients into a blender. Blend until smooth!

After blending, taste. If you want more heat, add more adobo sauce (by the tsp). If you want a lot more heat, add another chili. If the dressing is too spicy, add another 1 TBS of honey.

Notes

Store in refrigerator for up to 2 weeks.

Homemade Honey Mustard Dressing

Ingredients

  • 4 TBS honey
  • 2 TBS warm water
  • 3 TBS Dijon Mustard
  • 1 TBS apple cider vinegar

Instructions

  1. In a mason jar add the honey and warm water. Whisk to thin out the honey.
  2. Add the dijon mustard and apple cider vinegar. Secure lid and shake until mixed together.

Notes

Store in refrigerator for up to two weeks.

Greek Vinaigrette

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 garlic cloves, minced
  • Juice from 1/2 lemon
  • 1 tsp dried oregano or dried Italian herbs
  • 1/4 tsp salt

Instructions

Add all ingredients to a mason jar. Shake well to combine!

Notes

Will last in the refrigerator for up to one week.
